Description

A cozy and nutrient-dense toast that combines warm roasted sweet potatoes, creamy cottage cheese, and a hint of fall spices on hearty whole grain bread. Perfect for breakfast, brunch, or a light dinner. Naturally high in protein, fiber, and vitamin A, this toast is both satisfying and nourishing.

Ingredients

Scale

1 large sweet potato, peeled and sliced into ½-inch rounds

1 tablespoon olive oil

½ teaspoon cinnamon

¼ teaspoon nutmeg

Pinch of cardamom

½ teaspoon sea salt

¼ teaspoon black pepper

4 slices whole grain bread

½ cup cottage cheese (preferably full-fat, small curd)

1 tablespoon maple syrup (optional)

Optional toppings: toasted pumpkin seeds, fresh thyme, honey drizzle, rosemary

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Prepare the sweet potatoes: In a large bowl, toss sweet potato slices with olive oil, cinnamon, nutmeg, cardamom, salt, and pepper until evenly coated.

  3. Roast sweet potatoes on a parchment-lined baking sheet for 20–25 minutes, flipping halfway through, until caramelized and tender.

  4. Toast the bread to desired crispness.

  5. Assemble the toast: Spread cottage cheese on each slice (3–4 tablespoons per toast), layer with roasted sweet potatoes, and drizzle with maple syrup if desired.

  6. Add toppings like pumpkin seeds, herbs, or a light honey drizzle.

  7. Serve immediately while warm for best flavor and texture.

Notes

Pre-roast sweet potatoes and store refrigerated for up to 5 days to make weekday prep quick.

Whip the cottage cheese in a food processor for a smooth, creamy spread.

For a savory twist, swap sweet spices for smoked paprika, garlic powder, and rosemary.
